Chicken of the Woods Fried Rice
4 oz. Mushrooms, (chicken of the woods or any other)
2 C. Rice, cooked (preferably day old and slightly dried)
½ C. Onion, diced
½ C. carrot, diced
1 T. ginger, minced
1 T. garlic, minced
¼ C. scallion, thin sliced
½ C. peas, cooked (frozen is good, not canned)
2 ea. Eggs, scrambled and cooked then chopped
2 T. soy sauce
¾ C. sesame oil
1 T. parsley, chopped
Salt and pepper to taste
In a wok or non-stick skillet, heat the sesame oil until it just starts to smoke.
Add the mushrooms, onion, and carrot. Sauté until lightly browned.
Add the garlic and ginger and sauté for 30 seconds or until aromatic.
Add the rice and sauté until slightly browned.
Turn the heat down and add the soy sauce, peas, scallion, parsley and egg.
Season with salt and pepper and serve.
