Roasted Mushrooms with Spring Onion & Herbs
4 oz. Mushrooms
1 ea. Spring onion ½ T. Chives, chopped ½ T. Parsley, chopped ½ T. Tarragon, chopped 1 ea. Garlic clove, minced ¼ C. Olive oil Salt & Pepper Set your oven to broil with a rack on the top slot, just under the broiler. Clean and cut mushrooms into larger bite sized pieces. Slice the onions. In a mixing bowl, toss all ingredients together. Spread the mix onto a cooking sheet tray with edges into a single layer. Place in the oven under the broiler. Broil for 4-7 minutes until the mushrooms and onions begin to brown. Remove from the oven and let sit for 2 minutes to finish cooking through. Serve on of meats, tossed with vegetables, or any number of other options. |
