Roasted Shiitake Sweet Potatoes
4 oz. Shiitake mushroom, stem off and sliced
1 lg. sweet potato, diced
½ ea. white onion, sliced
2 T. parsley, chopped
¼ C. vegetable oil
1 T. Roasted Shiitake Sea Salt (or plain salt)
Heat your oven to 375 F. Prepare all ingredients and place in a mixing bowl. Mix together until well coated.
Spread everything on a pan sprayed sheet tray.
Bake for 25-30 minutes until the potatoes are cooked.
