Truffle and Parmesan Roasted Potatoes
8 ea. Red potatoes, quartered
2 T. Olive oil
¼ C. Parmesan cheese
1 T. Truffle Salt
1 T. Chives, chopped
½ T. Parsley, chopped
Heat your oven to 350 F.
Toss the quartered potatoes in half of the parmesan and all of the oil.
Lay out in a single layer on a sheet tray and roast in the oven for 25-30 minutes, or until browned and tender.
Place the potatoes back in the mixing bowl and add remaining parmesan, salt, and herbs and toss to coat.
